Zanana Cocktail

Zanana is Lousiana Creole for Pineapple. This delicious cocktail was created while filming the series Gifts from the Ancestors using the Pineapple Tea recipe of Nigerian Food Culturalist. Ozoz Sokoh.



The Zanana Cocktail

  1. Place 1 cup of prepared Pineapple Tea into a cocktail shaker.

  2. Add in 1 oz. of golden Rum

  3. Add ice and shake.

  4. Place into wine tumblers or cocktail glasses

  5. Garnish with a skewered pineapple and a leaf from the Crown.

Each Mother Sauce produces two to three secondary sauces and host of derivitive sauces.

The key to developing rich sauces is in mastering the art of making a Roux.

Over-hydrated or thin sauces can be saved by making "slurry"; part cool sauce or liquid plus starch for thickening.
